Simply Sweet Chocolate Chip Cheese Ball

After a failed experiment at concocting my own dessert cheese ball the other day, I decided to go with something tried and true - a chocolate chip cheese ball.

Determined to recreate the one I bought, I looked up recipes online and found they were all pretty much the same and the ingredients matched those on the label of what I purchased at the Amish store earlier this month.

Since I knew I'd probably eat the whole thing myself, I decided to make a smaller cheese ball, halving the amounts the recipe called for.

Start off creaming butter and cream cheese in a small bowl



Add confectioners sugar, brown sugar and vanilla


Toss in mini chocolate chips



Cover and refrigerate for about 2 hours

Shape into a ball (it will be sticky), wrap in plastic wrap and chill again for another hour before serving.

That's it!

The recipe I used said to roll in chopped pecans before serving, but I rolled mine in mini chocolate chips instead.  Honestly, I didn't think it needed to be rolled in anything at all.  The one I bought was naked on the outside and it was just as pretty and delicious without it.  I think I'll eliminate that last step when making it again.

Oh, and must serve with vanilla wafers!  

Every recipe I saw said to use graham crackers, and that's what they had out with the samples at the Amish store.  I bought vanilla wafers on a whim instead and I think it's a much better combination than the graham crackers, but of course the choice is yours.

Simply Sweet Chocolate Chip Cheese Ball

 1 - 8oz pkg cream cheese, softened
 1/2 cup (1 stick) butter, softened
 3/4 cup confectioner's sugar
 2 tbl brown sugar
 1/4 tsp vanilla extract
 3/4 cup mini chocolate chips
 3/4 cup finely chopped pecans (or walnuts)

Here's how my Simply Sweet Chocolate Chip Cheese Ball turned out.  Not the prettiest (I told you, I'm no foodie!) but it sure tasted good.

Cutting the recipe ingredients in half still yielded a good sized dessert cheese ball.  For point of reference, you see it here surrounded by vanilla wafer cookies on a dessert plate.

Another tip -- don't even bother with making a fancy cheese ball out of it at all! Just mix the ingredients and chill slightly and use it as a spread.

and here's me trying to cut the cholesterol! My husband will adore this recipe- he's been a cheesecake addict for decades. I often roll my truffles and other molded candy in colored sprinkles.

Some of the gals at Bible study last night were talking about this recipe--and trying to figure out a way to make it without the nuts so I could have it. I am so glad I read Marilisa's comment about rolling truffles in sprinkles--that just might work with this recipe!!!
